Gingerbread Breakfast Cookies

I love, love, love baking with my boys

We whipped up these delicious Gingerbread Breakfast Cookies yesterday and they were a smash hit! 
Of course, opt for certified organic ingredients whenever possible to reduce pesticide and herbicide exposure!

Gingerbread Breakfast Cookies

Ingredients
  

  • 1/3 Cup oat flour (certified gluten-free)
  • 1/2 Cup oats (certified gluten-free)
  • 1/4 Cup ground flax seed
  • 1/2 Cup walnuts finely chopped
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 Cup almond butter
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Molasses
  • 1/2 tsp Vanilla

Maple Glaze

  • 1 Cup powdered sugar
  • 1 Tbsp Almond milk
  • 1 Tbsp maple syrup

Instructions
 

  • Combine dry ingredients
  • Combine wet ingredients
  • Pour together and mix until just incorporated
  • Plop onto a parchment lined baking sheet and bake at 375 for 12 minutes
  • Let cool and then top with maple glaze
